Either spelling sound good to me. free_threaded is used as an adjective to describe the type of build (a "free-threaded build"), free_threading as a shorthand of "(with) free threading".
Using the official term everywhere will probably make things easier since you won't have to remember which of the two version was used in any particular context, and you can just free-threading everywhere.
